It's too vague a question to answer really because hollywood is always stealing from itself. I have no doubt that some post 90 movies have been remade. You said you didn't count reboots. What about movies that aren't officially remakes but are the same story with a different name. Strange Bedfellows came out in 2004 and was stolen as Chuck and Larry in 2007.
Now as far as something remade because they think the original is a classic, I don't really feel that vibe so it's hard to answer. To me remakes are more about making money without coming up with a new idea. Some are fun but most are pointless. La Fem Nakita (never could spell that right) was remade and it's pretty recent. I've read that a remake of Total Recall is in the works but I can't find the link now.
Then there are ones where the original is older but has subsequent remakes. Christmas Carol is the obvious first runner but 12 Angry Men, Alice in Wonderland, and pretty much anything Shakespearian fit in there.
I was trying to think of remakes that sucked so they remade it again. I know it's happened but I can't recall now. The Hulk is probably an example but it's a reboot also and personally I liked it anyway.
